The Shrimp and Cajun Foil packet has been in my rotation of camping meals for many years.

 

 

 

This shrimp and Cajun foil packet are a staple for me on camping trips. Not only is it quick to prep, but it’s packed with flavor and cooks in no time.

 

 

Ingredients:

  • 1 lb. shrimp, peeled and deveined
  • 1 andouille sausage, sliced
  • 1 ear of corn, cut into pieces
  • 1 bell pepper, chopped
  • 1 small red onion, sliced
  • 2 tsp Cajun seasoning
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Lemon wedges for garnish

Instructions:

  • Preheat the campfire or grill.
  • Lay out a sheet of foil and place shrimp, sausage, corn, bell pepper, and onion in the center.
  • Drizzle with olive oil and sprinkle Cajun seasoning, salt, and pepper over the mixture.
  • Fold the foil tightly, sealing the edges to prevent leaks.
  • Cook for 10-15 minutes over the campfire, flipping halfway through.

A mixture of Steak and Shrimp with cut up corn on the cob make the surf and turf an easy choice for me in the backcountry.

 

 

 

As far as campfire foil packets are concerned, the surf and turf rules over a lot of options. Even better, it brings the best of land and sea to your campsite.

 

 

Ingredients:

  • 4 oz steak, cubed
  • 6 large shrimp, peeled and deveined
  • 1 small potato, cubed
  • 1 zucchini, sliced
  • 2 tbsp butter
  • 1 garlic clove, minced
  • 1 tsp steak seasoning
  • Salt and pepper to taste

 

 

Instructions:

  • Preheat the campfire or grill.
  • In the center of a large foil sheet, place cubed steak, shrimp, potato, and zucchini.
  • Add butter, garlic, and sprinkle steak seasoning, salt, and pepper.
  • Seal the foil packet tightly to lock in the juices.
  • Cook for 15-20 minutes, flipping halfway through.
  • Carefully open the foil packet and enjoy your perfectly cooked surf and turf!

 

 

 

 

Sausage, Potato, and Green Bean Foil Packet

 

The sausage and potato foil packet with added green beans to the mix is a quick and easy meal while camping.

 

 

 

Simplicity at its finest, this sausage, potato, and green bean foil packet is a classic. Plus, it’s a great one-pan meal that fills you up. I prepare this meal for my family at home without the foil.

 

 

Ingredients:

  • 2 smoked sausages, sliced
  • 1 large potato, cubed
  • 1 cup green beans, trimmed
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste

These Chicken Nachos are simple and delicious. I had to include a Tex-Mex option in here.

 

 

 

Working in a Mexican restaurant for several years of my life, I had to include a Tex-Mex option. Who doesn’t love nachos? Even more, they’re surprisingly easy to make over a campfire, and this recipe adds a protein-packed twist with chicken.

 

 

 

Ingredients:

  • 1 cup cooked shredded chicken
  • 1 cup tortilla chips
  • ½ cup black beans
  • ½ cup shredded cheese
  • 1 jalapeño, sliced
  • ¼ cup salsa
  • ¼ cup sour cream
  • 1 tbsp cilantro, chopped

 

 

Instructions:

  • Preheat the campfire or grill.
  • Lay out a sheet of foil and place a layer of tortilla chips in the center.

With every good meal requires a good and simple dessert to go with it. Enter the S’mores Campfire Cone.

 

 

 

No camping trip is complete without dessert, and this S’mores campfire cone is a fun twist on the classic treat. Additionally, it’s less messy than traditional s’mores!

 

 

Ingredients:

  • 1 waffle cone
  • ½ cup mini marshmallows
  • ½ cup chocolate chips
  • 1 tbsp peanut butter (optional)
  • 1 tbsp crushed graham crackers

 

 

Instructions:

  • Preheat the campfire or grill.
  • Fill the waffle cone with marshmallows, chocolate chips, peanut butter (if desired), and crushed graham crackers.
  • Wrap the cone tightly in foil.
  • Cook over the campfire for 5-7 minutes, rotating occasionally.
  • Carefully unwrap and enjoy a gooey, chocolatey dessert!
